From one of the leading lights of the Natural Wine Scene in the Languedoc, this is 100% Cinsault from 43 year-old, dry farmed vines planted in clay-limestone soils outside Julien's hometown of Paulhan. The grapes were harvested by hand on the 19th and 20th of August in 2022. Upon arrival at the cellar the grapes were destemmed and placed in stainless steel tank where they spontaneously fermented. Unfined, unfiltered, no additional SO2. 11.3%ABV
