The Details
Primarily organically cultivated Sémillon with a bit of backyard Riesling. 25-54 year-old vines. Direct pressing to barrel for spontaneous fermentation and aging for 18-24 months topped up before bottling unfined, unfiltered, minimal (<10ppm) additional SO2.
