This is a blanc pét-nat from Quentin Bourse of Le Sot de l'Ange who works 12 hectares (and counting) of vines in Azay-Le-Rideau, Touraine in France's Loire Valley.
Tasting Notes: Super aromatic and fresh, this zippy sparkler brings to the fore the best of spring. Early flowering, just underripe berries and a cold rainy morning that clears before a beautiful April day, where the sun's warmth becomes the only thing in the world.
Vinification: A blend of Chardonnay and Sauvignon Blanc. Fermented and aged in three different vessels: cement tank, stainless steel tank, and a type of oak barrel that Quentin had made to his exact specifications deemed the “cigar” barrel. Disgorged and bottled unfined, unfiltered, with no additional SO2.
(Fun fact: Quentin's estate has been certified biodynamic (rare in Loire, rarer yet in Azay-le-Rideau) for 10 years!)
