The Details
100% Sauvignon Blanc from 25-year old vines that grow on a blend of marshy, humus soils. After a hand harvest, the grapes go into fiberglass tanks where they are foot crushed, followed by a 9 day infusion. The wine ages in old oak, where there is no racking or topping up. Unfined, unfiltered, no SO2.
