The Details

From the elusive Romain Verger of Chemille-en-Anjou, this is the 2023 rendition of his beguiling (and delicious!) expression of Sauvignon Blanc. As opposed to the famed week-long-slow-direct-pressing he's known for, this vintage saw just (just!) a 2-day uber-slow press of 70% of the grapes with 30% macerating for several days before pressing. Spontaneously fermented and aged in a combination of fiberglass and neutral vessel. Bottled unfined, unfiltered, no additional SO2. 12.5% ABV
