The Details

100% biodynamically cultivated Chardonnay from 35ish year-old vines on a rocky limestone scree in Nevy-sur-Seille (La Chaux is the name of the plot) which is well within the Château-Chalon appellation. Ouillè in barrel for about a year. Only white to see a micro-dose of sulfur during élevage owing to difficult vintage – gastronomic, broad, textured and rich with big acidity to match.
