The Details

40% Chenin Blanc, 40% Grolleau Gris, 20% Cabernet Franc from three different vineyards near Saumur. Grapes are hand-harvested from 45 year-old vines on average - grapes are vinified separately - all directly pressed. Spontaneous fermentation in tank prior to élevage for 9 months, blended and rested for 1 month and bottled unfined, unfiltered, no additional SO2.
