This is a co-fermented blend that shows off the technical, vinification-whizz side of Alain --- that, in essence, his dedication to natural winemaking, undergirded by curiosity and expertise, is most certainly not limited to the back-breaking work in the vineyard. Alain Castex, a quiet but immensely dedicated farmer and magic maker in the Roussillon, is one of our greatest heroes. His wines are passion incarnate. It is hard to not speak of these wines without a tear, because the vibrancy, soul, and heart here...well it’s a form of spirituality unto itself. 

Vinification: A blend of Grenache and Carignan hand-harvested from vines that range anywhere from 30-100 years-old grown in a complex soil composed of sand, sandy clay, gravel, and of course, schist. The grapes undergo spontaneous fermentation with only the help of native yeasts, partially whole-cluster and partially destemmed. This occurs in concrete tanks with a very short aging. Unfined, unfiltered no additional SO2.
