The Details
From organically cultivated home vines of Chardonnay/Pinot Blanc/Auxerrois in Dorlisheim, this is Christophe's Crémant. Grapes are hand-harvested from clay-limestone soils, directly pressed to stainless steel for spontaneous fermentation before bottling with the addition of fresh must for re-fermentation in bottle a la méthode traditionelle (no dosage). Aged sur latte for 10 months before disgorgement and release unfined, unfiltered, minimal (10ppm) added SO2.
