The Details

100% Pinot Gris from organically cultivated 35 year-old vines in the limestone/clay soils outside Dorlisheim in the north of Alsace. Grapes are hand-harvested, macerate for a day or two prior to pressing. Spontaneous fermentation starts in stainless steel tank prior to bottling a la ancestral method whereby the wine ferments to dryness under crown cap in bottle. Unfined, unfiltered, no additional SO2.
