The Details
Old-vine Cinsault from schistous soils near Corbrières in the south. Grapes are hand-harvested from organically cultivated vines, whole-bunch 1-week spontaneous fermentation/maceration before pressing. Aging for 8 months in demi-muid before bottling unfined, unfiltered, no additional SO2. 10.5% ABV
