From biodynamically cultivated vines averaging 35 years-old, this is a non-vintage Savoyard specialty: Altesse, Jacquère, Gringet, Savagnin, Molette, & Mondeuse Blanche from 2020/2021/2022. Vinification each year was as follows:
2020 - Altesse/Jacquère, directly pressed and spontaneous fermentation and aging take place for 33 months sur lie in concrete tank.
2021 - Altesse and Jacquère are directly pressed while Gringet, Savagnin, Molette and Mondeuse Blanche macerate for a short period of time prior to pressing and blending. Spontaneous fermentation and élevage sur lie for 27 months in concrete tank.
2022 - Altesse, Jacquère directly pressed and a short maceration of Gringet & Savagnin prior to pressing and blending. Spontaneous fermentation and élevage sur lie in concrete tank for 9 months.
Racked and blended 48 hours before bottling. Unfined, unfiltered, no additional SO2. 11% ABV
