The Details
From the Savoie, this is biodynamically cultivated Mondeuse, Gamay, and 8 different red & white grapes of the region. Grapes are hand-harvested and the reds are whole-bunch directly pressed while the white grapes macerate for a short period before pressing and blending. Juices spontaneously ferment and age 9 months sur lie in a combination of demi-muid and concrete tank. Bottled unfined, unfiltered, no additional SO2. 11.5% ABV
