The Details

A co-planted, co-fermented field blend of biodynamically cultivated 40 year-old Mondeuse and a host of other rare red and white alpine varieties. Grapes are hand-harvested, Mondeuse is directly pressed and the 9 other varieties whole-cluster macerate in the Mondeuse juice for a short period of time before pressing. Élevage for 9 months in concrete tank and demi-muid before bottling unfined, unfiltered, no additional SO2. 11% ABV
