This is a fascinating, deep and vibrant expression of Chardonnay, carrying a bit of savory rotundity (more salty/minerally than meaty) and beautifully ripe pome fruit (more pear than apple), a dream pairing for fresh sashimi. From Marie and Vincent Tricot who tend 10.5 hectares of vines around the village of Orcet in the Auvergne.
Vinification: 100% Chardonnay hand-harvested from 45 year-old vines grown in limestone, clay, and basalt soils. The grapes undergo whole-cluster spontaneous fermentation (ambient yeasts; no temp. control) in stainless steel tank in addition to full malolactic fermentation before an élevage that takes place in barriques. Bottled unfined, unfiltered, with no additional SO2. 13%ABV
