The Details

Organically cultivated Moravian Muscat, Müller Thurgau and Pinot Gris from Znojmo in southwestern Czechia. Grapes are hand-harvested and semi-carbonically whole-cluster macerated in open-top wooden fermenters for 10 days before pressing and continuation of fermentation in glass demijohn. Bottled a la ancestral method prior to completion of primary fermentation to finish to dryness under crown cap. Unfined, unfiltered, undisgorged, no additional SO2.
