100% old-vine (70+ years-old) Macabeu from schistous soils. Grapes are hand-harvested and whole-cluster macerate for 3-weeks prior to pressing to demi-muid for spontaneous fermentation & a short élevage. Bottled unfined, unfiltered, no additional SO2.
