The Details
Liter bottling of a skin-contact wine from Lebanon - the cépage is 70% old-vine (150+ years-old) Merwah from the north of Lebanon & 30% Sauvignon Blanc (12-15 year-old vines) from the Bekaa Valley. Sauvignon Blanc is partially destemmed and spontaneously ferments in contact with the skins for 2 weeks meanwhile the Merwah sees a 3-week maceration prior to pressing and blending with the Sauvignon Blanc. Racked twice, the wine is bottled in late spring unfined, unfiltered, no additional SO2.
