The Details
Lebanese co-ferment! This is 80% Merwah from very-old vines (150+ years-old) in the north of the country co-fermented with 20% Sangiovese from younger vines in the Bekaa. Grapes are hand-harvested and destemmed prior to 4-week co-maceration in stainless steel tanks before racking to separate the wine from the skins. Spontaneous fermentation. Bottled unfined, unfiltered, no additional SO2.
