The Details

100% old-vine Chenin from a south-facing slope in Vouvray. Organic+ farming. Directly pressed, spontaneously fermented (minimal added SO2 <15ppm at débourbage) and aged in a combination of stainless steel and neutral oak. Bottled thereafter unfined, unfiltered, no additional SO2. 14% ABV
