The Details
100% young-vine Susumaniello planted in the clay soils of Salice Salento in southern Puglia from the region's longtime champion of vino vero, natural wine, Natalino del Prete (now operated by his daughter, Mina). 4-5 day maceration and spontaneous fermentation in concrete vat prior to racking to stainless steel where it completes its alcoholic and malolactic fermentation. Racked back into concrete to rest until bottling. Unfined, unfiltered, no additional SO2. 12%ABV
