The Details
Gussago, Brescia, Lombardy. A traditional method sparkler made from 100% Chardonnay rooted in clay soil. First fermentation with wild yeasts only (goes through full malo). Secondary is kickstarted via yeast + 24g of organic sugar. Aged for "50 moons" in bottle and then disgorged. No added SO2.
