The Details
This is truly cider heaven, like a cup of lemon italian ice topped with fresh mint from Vincent Marie of Domaine No Control who works around the village of Volvic in the Auvergne.
Vinification: For this cider, the apples are purchased in cider country (Normandy, Northern France) and shipped to the Auvergne. The apples are sourced from an organically farmed orchard sans treatment and eco-grazed by sheep. Apples are directly pressed upon arrival. Spontaneous fermentation after a short rest takes place once enough oxygen is deprived. Bottled to create a cider with slight residual sugar and a more pristine clarity than its sibling cuvée, the HellCider.
