The Details
This is a wine named for the vineyard where it is grown, a site where the native horsetail that springs from this feldspar-dominant soil is weak enough to bend in the wind, resembling a bishop's crozier, Les Crosses by another name. Chardonnay zippy and delightful with a savory touch to it distinct to Vincent Marie's take on the grape grown here in Volvic.
Vinification: 100% Chardonnay hand-harvested from 15 year-old, south-facing vines grown in volcanic feldspar soils at ~1300 feet elevation. The grapes are directly pressed and undergo spontaneous fermentation (ambient yeasts; no temp. control) into inox tank where the wine will then rest for 6 months prior to being bottled unfined, unfiltered, with no additional SO2.
