100% Chardonnay (blanc des blancs) from Fontette - not Riceys - ergo the cuvée's name "Ailleurs" (tr: elsewhere). Neutral barrel for spontaneous fermentation and élevage, zero dosage, bottled unfined, unfiltered, minimal SO2 at bottling.
