CHAMPAGNE MAGNUM!
80% Pinot Noir, 20% Pinot Blanc from 8 different biodynamically cultivated sites throughout Riceys, Olivier's home village. Each variety is vinified separately and go through malolactic fermentation. Aged sur lie in neutral oak barrel. Prior to secondary fermentation, a vintage base wine (in this case, 2019) is blended with a solera of perpetual reserve. Zero dosage. Unfined and unfiltered. Every cuvée is very-low-to-no-added SO2 depending on vintage conditions.
