The Details
From one of the last families still producing Rosé des Riceys - still, deeply macerated rosés produced from Pinot Noir cultivated in the village of Riceys in Champage. A single-vineyard bottling from En Barmont, a steep slope with heavy clay soils. 100% Pinot Noir, grapes are hand-harvested, 10% are foot trodden at the bottom of the cuve upon arrival at the winery prior to whole-bunches being added over the top of it. Semi-carbonic maceration lasts 5-6 days with pumping over 2x a day. Racked to neutral barrel for élevage of many years (3-6, depending) prior to bottling unfined, unfiltered, no additional SO2.
