The Details
Mag of back-vintage Saignée Champagne! 100% biodynamically Pinot Noir from En Barmont in Riceys. Grapes are hand-harvested and semi-carbonically macerate for 4 days before pressing. Spontaneous fermentation and aging in neutral oak barrel. Secondary fermentation in bottle after a long aging sur latte. This is always a vintage wine (no perpetual reserve) and bottled with zero dosage. Unfined, unfiltered, minimal added SO2.
