The Details

100% Sapervai from Khashmi (Kakheti). Grapes are hand-harvested from organically cultivated vines at 700m altitude and semi-carbonically macerate for 2 weeks, spontaneously in Qvevri (a combination of pressed juice and whole-cluster Saperavi). Racked to neutral oak for 6 months élevage. Bottled unfined, unfiltered, minimal (<35ppm) added SO2.
