The Details

90% Malbec, 10% Merlot from biodynamically farmed vines in St. Émilion. Grapes are hand-harvested and bled a la saignée method after a short maceration. Spontaneous fermentation in vessel. Bottled unifned, unfiltered, no added SO2 while still fermenting a la ancestral method (pét-nat). Disgorged in early 2024.
