The Details

100% biodynamically cultivated Cabernet Sauvignon from the sandy limestone based soils of Cissac-Médoc. Grapes are hand-harvested from ~80 year-old vines and destemmed with a maceration of a few weeks before pressing. Spontaneous fermentation and aging for 2 years in neutral 500L barrel. Bottled unfined, unfiltered, minimal (10-15ppm) added SO2. 12.5% ABV (2 barrels produced)
