The Details

From Osamu Uchida in Pauillac down the road from Mouton-Rothschild, this is biodynamically cultivated Sauvignon Blanc & Sauvignon Gris from 30 year-old vines. Breakdown is about 60% Blanc to 40% Gris. Grapes are hand-harvested, manually destemmed, directly pressed to stainless steel. Spontaneous fermentation and a short maturation also in tank prior to bottling unfined, unfiltered, minimal added SO2. 13.5%ABV
