The Details
Pleiades are nymphs associated with the stars, aptly naming this orange wine from the slopes of the highest mountain of Greece. 100% Roditis, macerated on the skins for 25 days (with partial whole-cluster), then rested in old barrel. Wild yeast fermentation, no fining or filtration, minimal SO2. A Chez Panisse dessert: a perfect peach, delightfully salty and ripe, with crunch and raw energy.
