The Details

100% biodynamically cultivated Cabernet Franc sourced from Colin Janot in Saix in the western Loire. Grapes are hand-harvested, 80% destemmed, 20% directly pressed. The whole-berries macerate in the directly-pressed juice (infusion / flottaison) with daily punchdowns for 10-days. Spontaneously fermented, the wine is pressed and ages for 9 months in stainless steel tank prior to 3 months in bottle before release. Unfined, unfiltered, no additional SO2.
