The Details

100% Sylvaner from 35 year-old organically cultivated vines outside Dambach-la-Ville in Alsace. Grapes are hand-harvested, and slowly directly pressed to old Meursault barrels. the juice spontaneously ferments and spends 20 months sur lie all in barrel. Bottled unfined, unfiltered, minimal (<15ppm) added SO2.
