The Details
60% old-vine Savagnin, 40% Chardonnay. Stainless steel tank after destemming and direct-pressing for spontaneous fermentation followed by 10-12 month élevage in neutral barrel. Unfined, unfiltered, minimal SO2 at bottling.
Plume is the brainchild of Gevrey-Chambertin-born Aymerick Geantet, an exciting young winemaker who spent many years at the renowned Domaine Prieuré Roch. Upon his departure from the Côtes de Nuits, he embarked on a search for vineyards where he could push the boundaries of Chardonnay and Pinot Noir, while also expanding his horizons. He landed in Le Sud Revermont, Rotalier in the Jura.
