The Details
40% Trousseau, 35% Pinot Noir, 25% Poulsard. Partially destemmed, grapes are semi-carbonically macerated and spontaneously fermented in stainless steel tank prior to pressing and élevage in neutral barrel for 10-12 months. Bottled unfined, unfiltered, minimal SO2 at bottling.r
Plume is the brainchild of Gevrey-Chambertin-born Aymerick Geantet, an exciting young winemaker who spent many years at the renowned Domaine Prieuré Roch. Upon his departure from the Côtes de Nuits, he embarked on a search for vineyards where he could push the boundaries of Chardonnay and Pinot Noir, while also expanding his horizons. He landed in Le Sud Revermont, Rotalier in the Jura.
