The Details
From the Trivium (where Lazio, Tuscany, and Umbria meet at high-elevation), this is biodynamically farmed Procanico/Sangiovese and a host of other native varieties from Lazio. Grapes are hand-harvested, spontaneously fermented separately in stainless steel prior to blending and resting also in steel and being bottled unfined, unfiltered, minimal added SO2.
