The Details
60% Nero d'Avola, 40% Perricone from Monreale high above the northwestern Sicilian city of Alcamo. Grapes are biodynamically cultivated on 50 year-old vines planted to sandstone-dominant soils. Hand-harvested, the grapes are destemmed after pre-fermentative cold-soak. 10-day maceration is followed by pressing. Spontaneous fermentation and aging (12 months élevage) all in cement tank. Bottled unfined, unfiltered, minimal (<20ppm) added SO2. 6 months bottle aging prior to release.
