The Details
100% biodynamically cultivated Perricone from Monreale in Northwest Sicily from vineyards planted to 70 year-old vines grown in limestone soils at 600m elevation. Hand-picked in early October, the grapes are destemmed and sponteously fermented in cement tank. 12 month élevage in 25HL neutral oak cask. The wine rests for a further 6 months in bottle prior to release. Unfined, unfiltered, minimal SO2 at bottling. 13%ABV
