The Details

100% Catarratto from sandy soils grown at 600m elevation in Monreale, northwest Sicily. 70 year-old vines biodynamically cultivated. The grapes are destemmed and macerated/spontaneously fermented for 30 days in concrete vat prior to a soft pressing into 25HL neutral oak casks where the wine ages for a year. Bottled unfined, unfiltered, minimal added SO2.
