The Details
100% Catarratto from biodynamically cultivated 50 year-old vines planted to the sandstone-dominant soils of Monreale high above the northwestern Sicilian city of Alcamo. Grapes are hand-harvested, gently pressed, and spontaneously fermented in cement tanks. Secondary re-fermentation is triggered after bottling with the addition of fresh must. Unfined, unfiltered, undisgorged, minimal (<20ppm) added SO2.
