The Details
Blend of 70% Sacy de Bourgogne and 30% Chardonnay, the two main white grape varieties of the estate, all grown on clay-limestone soils. An orange wine with a fresh bouquet. Whole-cluster maceration lasted two months, resulting in beautiful lees in the barrel, gently stirred regularly but not too often, simply to keep volatile lees suspended in the juice. Aged 9 months in 228 L Burgundy barrels.
