Tasting Notes: Lush, fresh and warming without ever becoming hot -- plummy fruit define the palate and bell-pepper with sun-baked thyme release a heady retronasal bouquet. As Tom would say: a Midweek smasher!
Vinification: Syrah, with a splash of Mourvèdre. Tom Shobbrook, along with Anton Von Klopper of Lucy Margaux, is one of the OG natural winemakers of South Australia. Located on his family property in the Barossa Valley, Tom cultivates his own family vines biodynamically, and uses some sourced grapes from organic and biodynamic neighbors around South Australia. In the cellar, everything is carefully guided without the addition of anything, including SO2.
