100% Syrah, made in tribute to the gorgeously translucent Poulsards of Jura. The Syrah is destemmed and pressed directly, albeit gently to extract some color and just a hint of tannin. A sublime wine that, with its time to rest, is bursting with joy but no defaults!
Tom Shobbrook, along with Anton Von Klopper of Lucy Margaux, is one of the OG natural winemakers of South Australia. Located on his family property in the Barossa Valley, Tom cultivates his own family vines biodynamically, and uses some sourced grapes from organic and biodynamic neighbors around South Australia. In the cellar, everything is carefully guided without the addition of anything, including SO2.
