The Details
100% organically cultivated Pinot Noir from both young and old vines in a parcel below Les Lavières - red clay and gravelly limestone. Grapes are hand-harvested, and spontaneously ferment 100% whole-cluster for 4-5 days prior to pressing. Spontaneous fermentation and élevage for 12-18 months in barrel (0-20% new oak, depending on vintage). Unfined, unfiltered, minimal (often <20ppm) added SO2. 12.5% ABV
