The Details

100% Chardonnay from 30+ year-old organically cultivated vines in Savigny on sandy soils. Grapes are hand-harvested, directly pressed and settled overnight. Spontaneous fermentation and aging in barrel (0-15% new oak depending on vintage). Bottled unfined, unfiltered this vintage, and minimal (<20ppm) added SO2. 12.5% ABV
