The Details
From Catalonia, this is monovarietal Parellada organically cultivated on 40-60 year-old bush vines planted in calcareous clay soils at 500-700m elevation. Two vineyards, one is spontaneously fermented/macerated for 20 days in steel (extracting no real color or tannin; texture, primarily) while one is directly pressed. Élevage also in stainless steel before bottling unfined, unfiltered, no additional SO2.
