50% Grolleau, 50% Pineau d'Aunis hand-harvested from 45-50 year-old biodynamically cultivated vines grown in siliceous clay and limestone soils in an area equidistant between Anjou & Saumur in France's Loire Valley. The grapes are destemmed and undergo native yeast fermentation with a 3 week maceration in fiberglass tank before being pressed into neutral oak barrels where it will undergo full malolactic fermentation followed by a 12-month élevage. Unfined, unfiltered, no additional SO2. 12%ABV
