The Details
100% Pinot Noir from 70+ year-old vines organically cultivated in Pressoniers south of Gevrey-Chambertin. Up to 20% of the grapes macerate whole-cluster for 10-12 days in open wood vat while the rest are destemmed. The juices spontaneously ferment and age in barrel, a variation of amounts of new oak never more than 10%. Unfined, unfiltered, minimal-no added SO2 depending on the vintage. 12.5%ABV
